Taco Salad

  • 1-4 tsp olive oil
  • 4 oz (F) or 6 oz (M) lean ground beef (96% or above lean)
  • ¼ tsp ground cumin
  • ¼ tsp smoked paprika
  • ¼ tsp chili powder
  • ¼ tsp garlic powder
  • ½ cup red onion, chopped
  • 1 oz shredded mozzarella cheese
  • ½ avocado, chopped
  • ½ cup cherry tomatoes, halved
  • 1 cup romaine lettuce, torn into bite-sized pieces

Step by Step Instructions

Step 1

Add the olive oil, beef, and spices to a skillet over medium-high heat. Cook, using a spoon to break the meat up into smaller pieces (and stir often), for around 7 minutes or until it’s cooked through.

Step 2

Meanwhile, prep your other salad ingredients and add them to a large salad bowl.

Step 3

Once the ground beef is cooked, sprinkle it over the salad.

Step 4

Add dressing and toss.

Drizzle (1 tbsp) Greek Yogurt (Ex: FAGE 0% Total) over salad as a sour cream replacement (optional).
