Ingredients
- 1 package Options High Protein Fusilli
- 2-3 oz diced chicken breast
- ½ cup grape tomato – halved
- ½ cup cucumber – diced
- ½ cup red onion – chopped
- ½ cup baby spinach – washed and rinsed
- 1 TBSP olive oil
- 1 TBSP red wine vinegar
- 1 oz mozzarella cheese
Season to taste:
- salt and pepper
- garlic salt

Instructions
1. Prepare Options High Protein Fusilli per package instructions
and let cool.
2. Season a 2-3 oz chicken breast seasoned with garlic salt and pepper.
3. Grill chicken at 425 degrees for 9-10 minutes, flipping half-way.
4. Once cool, dice chicken breast into 1-inch cubes.
5. Add all proteins, vegetables, and cheese into large mixing bowl.
6. Drizzle olive oil and vinegar over salad and stir until all ingredients
are coated in dressing.
7. Serve chilled.
