- 1 tbsp olive oil, divided
- 1 clove garlic, sliced
- 2 cups spinach
- 1/4 tsp salt plus 1/8 tsp, divided
- 1 ½ tsp lemon zest
- (frozen) or 6 oz shrimp (M)
- 1/4 tsp crushed red pepper
- 1 tbsp finely chopped fresh parsley

Step by Step Instructions
Step 1
Heat 1 part of the olive oil in a large pot over medium heat.

Add half the garlic and cook until beginning to brown, 1 to 2 minutes.

Add spinach and ¼ tsp salt and toss to coat. Cook, stirring once or twice, until mostly wilted, 3 to 5 minutes.

Remove from heat. Transfer to a bowl and keep warm.

Increase heat to medium-high and add the remaining oil to the pot. Add the remaining garlic and cook until beginning to brown, 1 to 2 minutes.

Add shrimp, crushed red pepper and the remaining 1/8 tsp salt; cook, stirring, until the shrimp are just cooked through, 3 to 5 minutes more.

Serve the shrimp over the spinach, sprinkled with lemon zest and parsley.
