Mashed Cauliflower

Enjoy this mashed potato alternative! This is an easy substitute to offer your family as a healthy side at your holiday meal.  

Ingredients

  • 8 cups bite-size cauliflower florets, about 1 head chopped 
  • 4 cloves garlic, crushed and peeled 
  • ⅓ cup sour cream or Greek yogurt
    (use only 1 tablespoon if in ODS phase 1) 
  • 1 tsp butter 
  • ½ tsp salt 
  • Add seasonings to taste:  
    • Freshly ground pepper 
    • Garlic Salt 
    • Onion Salt 
    • Italian Seasoning 
    • Garnish with minced fresh chives

Instructions

Place garlic and cauliflower florets in a steamer basket over boiling water, cover and steam until soft. 12 to 15 minutes.
Microwave Option: place cauliflower and garlic in a microwave-safe bowl with 3 tablespoons of water, cover and microwave on high for 3 to 5 minutes. 

Drain well!  (Cauliflower contains a good amount of water) 

Place the cooked cauliflower and garlic in a food processor or blender. Add sour cream/Greek yogurt, butter, salt and other seasoning; pulse several times, then process until smooth and creamy. For a thicker consistency, use a potato masher.  

Transfer to a serving bowl. Garnish with chives, if desired.  
Serve hot.
